Turkey Scallopine with Dijon Sauce

Turkey Scallopine with Dijon Sauce - moist, turkey (or chicken) breast fillets are pan sauteed and served with honey dijon sauce flavored with a hint of thyme. Perfect for a quick dinner and is super kid-friendly as the dijon sauce may be served on the side.

Ingredients:
Turkey (or chicken) breast fillets, 4 oz each - 6
Flour – ½ cup
Salt – ¼ tsp
Pepper – ¼ tsp
Paprika – ¼ tsp
Olive Oil – ¼ cup
Honey – ¼ cup
Dijon Mustard – 2 Tbsp
Lemon Zest – 1 tsp
Lemon Juice – 2 Tbsp
Garlic, minced – 1 tsp
Thyme, (fresh if possible) – ¼ tsp
Directions:
1. Into zip lock bag, place: flour, salt, pepper and paprika. Place turkey fillets, one at a time, in bag of flour mixture and shake gently to coat.
2. In a hot skillet, warm 2 Tbsp Olive oil. Place floured turkey fillets in pan and brown on both sides. Remove from pan and place on platter.
3. Into warm sauce pan, pour remaining ingredients and turn heat down to medium. Stir constantly to loosen particles in bottom of pan and heat for only 1 minute until sauce begins to turn brown. Pour over plated turkey.
