Turkey Cutlet with Lemon Tarragon Sauce

If you have any finicky eaters, brown turkey and reserve their portion on a warm platter. Serve browned turkey with lemon tarragon sauce in a small cup to use as a dip. Kids love dip!
Ingredients:
Turkey breast fillets, 4 oz each - 6
Breadcrumbs - 1/2 cup
Onion Powder - 1 tsp
Garlic Powder - 1 tsp
Paprika - 1 tsp
Salt - 1/4 tsp
Pepper - 1/4 tsp
Butter – 4 Tbsp
Lemon Juice – 2 Tbsp
Chicken Broth – 4 Tbsp
Garlic, minced – 1 Tbsp
Fresh Chives, chopped – 2 Tbsp
Fresh Tarragon, chopped – 2 tsp
Directions:
1. In a zip lock bag, add: breadcrumbs, onion powder, garlic powder, paprika, salt and pepper. Seal and shake to combine ingredients. In bag, shake turkey, one fillet at a time to ensure even coating. Place on a wire rack to rest 10 minutes and dredge the pieces in the breadcrumb mixture again.
2. In a hot skillet warm 2 Tbsp Olive oil. Place coated turkey fillets in pan and brown on both sides. Remove from pan and place on platter.
3. Pour remaining ingredients into sauce pan and turn heat down to medium. Stir constantly to loosen particles in bottom of pan and heat for only 1 minute until butter is melted. Pour over plated turkey.
