Smores Pie
Serves: 6-8 - Cooking Method: Stovetop and Broiler - Total Time: 1 hour
Smores Pie - not just for campfire kids! Our smores pie is all grown up with a graham cracker crust, a dutch chocolate custard middle and topped with roasted mini marshmallows. Rich and creamy, be sure to pour a large glass of milk!
Ingredients:
Sugar – 1 cup
Cornstarch – ¼ cup
Cocoa Powder – 6 Tbsp
Salt – ¼ tsp
Half and Half – 3 cups
Egg Yolks – 4 Tbsp
Butter – 2 Tbsp
Vanilla – 2 tsp
Mini Marshmallows - 2 cups
Graham Cracker Pie Shell
Directions:
1. In a 2-quart sauce pan, whisk: Sugar, Cornstarch, Cocoa Powder, Salt, and half-n-half until smooth. Bring the mixture to a boil, stirring often.
2. Pour 1/2 -1 cup of chocolate mixture into a small cup or bowl, add the egg yolks and mix. Add a bit more chocolate mixture, then return the chocolate/egg mixture to the saucepan.
3. Boil over medium heat for 1 minute stirring constantly. Remove from heat and butter, stirring until melted. Pour custard into the pie shell and allow to cool at least 15 minutes, or chill it in the refrigerator over night.
4. Just before serving, heat the oven to broil (lower rack down to 2nd shelf). Cover the pie with mini marshmallows and broil it for about 30 seconds or until lightly browned. (Watch constantly or it will burn) Serve warm or chilled.
