Pork Tenderloin Tapenade

Pork Tenderloin Tapenade - A pork tenderloin recipe that is marinated in a garlic, rosemary, thyme marinade, split and topped with a green and black olive tapenade. Moist, and delicious you won't believe that this is another quick easy dinner recipe. Great to impress your guests.

You may wish to roast the tenderloin "naked" for the kids and serve the tapenade on melba toasts.
Ingredients:
Pork Tenderloin - 1 1/2 - 2 lbs.
Salt – 1 tsp
Pepper – ½ tsp
Olive Oil – 2 Tbsp
Rosemary (crush in your hand) – 1 tsp
Dried Thyme – 1 tsp
Garlic – 2 tsp
Garlic – 2 tsp
Black olives – 1/3 cup
Green Olives – 1/3 cup
Lemon Zest – 1 tsp
Parsley – 2 Tbsp
Olive Oil – 2 Tbsp
Pepper – ½ tsp
Red Pepper Flakes – ¼ tsp
Directions:
Place tenderloin in zip-lock bag with: Salt, Pepper, Olive Oil, Rosemary (crush in your hand), Dried Thyme, and Garlic. Marinate for at least 1 hour to overnight.
Pre-heat oven to 415.
1. Remove pork from marinade and place in baking dish. Cut a lengthwise slit 3/4 of the way through the tenderloin. Throw away unused marinade. Bake for 15 minutes and take out of oven.
2. Place remaining ingredients in food processor and pulse until olives are roughly chopped.
3. Reduce heat to 375, top pork with olive tapenade and bake for 25-35 more minutes until internal temperature reaches 165.
