Pork Tenderloin Margarita Medallions
Serves: 4-6 - Cooking Method: Stovetop or Grill - Total Time: Marinate overnight, cook 15 minutes
Pork Tenderloin Margarita - mexican recipe straight up or on the rocks? Cut pork tenderloin into medallions for a quick easy dinner, or leave whole and grill. Tenderloin is marinated in tequila, lime juice, cilantro and Mexican spices with a hint of orange.

Ingredients:
Pork Tenderloin - 1 1/2 - 2 pounds
Lime Juice - 2 Tbsp
Cilantro - 3 Tbsp
Orange Juice - 1 Tbsp
Garlic - 3 tsp
Tequila - 1 ½ Tbsp
Jalapeno - 1 Tbsp
Chili Powder - ½ tsp
Cumin - 1 tsp
Green Onion - 2 Tbsp
Salt - 1 tsp
Directions:
For stovetop: slice meat into 1 1/2 inch slices. For grill, leave tenderloin whole.
1. Place all ingredients in zip-lock bag and let marinate overnight or at least one hour.
2. For stovetop: Empty contents of marinated pork bag into a warm sautee pan. Heat over medium heat. Turn medallions after 5 minutes and continue cooking until center of meat has no signs of pink when sliced open.
3. For grill, clean grates and heat grill to medium. Take meat out of bag and discard unused marinade. Place meat in center of grate and close cover. Turn frequently to avoid burning. Grill until internal temperature reaches 155.
