Lemon Pepper Haddock
Serves: 4-6 - Cooking Method: Bake in oven - Total Time: 40 minutes
Lemon Pepper Haddock nestled over a bed of creamy risotto. You make the lemon pepper seasoning (you control the sodium level and amount of pepper) and sprinkle on a white fish fillet (you can use: haddock, cod, sole, flounder). Mellow enough for finicky eaters, yet appealing for seafood lovers!

Ingredients:
White Fish Fillet (Haddock, Cod, Sole, Flounder) - 1 1 /2 - 2 lbs.
Black Pepper – 1 Tbsp
Dried Lemon Peel – 1/2 tsp
Ground Coriander – 1/2 tsp
Dried Minced Onion – 3/4 tsp
Ground Thyme – 3/4 tsp
Dried Parsley Flakes – 1/4 tsp
Chicken Broth - 1/2 cup
Directions:
Preheat oven to 325.
1. In small bowl, mix together: Black Pepper, Dried Lemon Peel,
Ground Coriander, Dried Minced Onion, Ground Thyme, and Dried Parsley Flakes.
2. Spray 9x12 baking pan with cooking spray. Place fish fillet(s) in bottom of pan and sprinkle with dry herb mix. Pour chicken broth in bottom of pan (being careful not to rinse off herbs) and cover with foil. Bake in oven 20-25 minutes checking after 15 minutes for doneness. Baking time will depend on thickness of fish fillets. Fish should begin to flake when pierced with fork.
