BBQ Pizza

Serves: 4-6 - Cooking Method: Grill or Oven - Total Time: 30 minutes


BBQ Pizza is a quick easy dinner recipe to use leftover chicken or leftover turkey. Each flour tortilla or pizza crust gets topped with homemade bbq sauce, cooked turkey or chicken and cheddar cheese. Great for a summer bbq grill or in the oven any time of the year. Homemade BBQ sauce is great for any grilled meat also!

Ingredients:

Flour Tortillas - 6
OR Frozen Pizza Crusts, 9" - 3
Cooked Turkey or Cooked Chicken, cut into 1/4 inch cubes - 3 cups
Cheddar Cheese, shredded - 3 cups

BBQ Sauce Recipe

Ketchup - 1 cup
Onion, diced - 1/4 cup
Garlic, minced - 1 tsp
Worcestershire Sauce - 1/4 cup
Molasses - 1 1/2 tsp
Malt Vinegar - 1 1/2 tsp
Salt - 1 tsp
Lemon Juice - 2 1/2 Tbsp
Yellow Mustard - 1 tsp
Crushed Red Pepper - 1/2 tsp
Tabasco - 1/2 tsp
Dried Thyme - 1/4 tsp

Directions:

If grilling, Preheat grill to medium. Clean and oil grates to prevent sticking. Brush both sides of Tortillas with Olive Oil and place on grill for 2 minutes. Turn to crisp other side. Tortilla should start to bubble, but not become too brown. If tortilla begins to burn, turn down heat and move to another spot on the grill.

If baking in oven, preheat oven to 375 degrees. Place defrosted pizza crusts on middle rack and warm in preheated oven until crust begins to brown - 15 to 20 minutes.

1. In small-to-medium sized mixing bowl, mix ingredients for BBQ sauce. Divide sauce among pizza bases (tortillas or pizza crust) and spread evenly to cover.

2. Sprinkle shredded cheese over sauce and layer with chopped cooked turkey or cooked chicken.

3. Grill for 2-3 minutes until meat warms. Sprinkle with any remaining shredded cheddar cheese and close the grill cover. Check pizzas after 2 minutes. Cheese should be melted.

If baking, place pizza crusts back in oven for 10-15 minutes until meat is warm and cheese begins to melt. Turn broiler on low and watch continuously until cheese begins to bubble and brown.
