Tandoori Chicken

Serves: 4-6 - Cooking Method: Grill or Broiler - Total Time: 4 hours to overnight for marinade, 15 minutes cooking


Tandoori Chicken style recipe that is mild enough for kids, but flavorful enough for lovers of Indian cuisine. The yogurt marinade works overnight so that cook time is quick and efficient. Can be served as a meal, or as an hors d'ouerve.

Ingredients:

Chicken breast, boneless, skinless - 1 1/2 pounds
Onions, small diced - 3/4 cup
Ginger - 1 tsp
Minced Garlic - 2 tsp
Plain Yogurt - 1/2 cup
Lemon Juice - 1 Tbsp
Paprika - 1 tsp
Cumin, ground - 1 tsp
Coriander, ground - 1 tsp
Salt - 1/2 tsp
Chili Powder - 1/2 tsp
Pepper - 1/4 tsp
Nutmeg - pinch

Directions:

1. Place all ingredients in a zip-lock bag and massage to evenly mix ingredients. Let rest in the refrigerator for 4 hours up to overnight.

2. Preheat grill and oil racks to prevent sticking. Remove chicken from marinade and discard marinade. Place chicken on grill rack and cook, covered, 5-7 minutes per side or until done, turning once. Chicken will feel firm to the touch, like the fleshy part of your palm between your thumb and wrist. Remove from heat. Can also be broiled about 4” from heat source until done.
